

This week is Brain Awareness Week, and we wanted to share one of Texarkana Emergency Center’s favorite Mind Diet recipes to celebrate. The Mind Diet is a series of guidelines for your family’s diet that promote brain health and help to prevent conditions like Alzheimer’s later in life. Incorporating some of these techniques into your meal prep can do wonders to improve your brain’s health.
This recipe is great for make-ahead breakfasts, as you can make enough for the whole week, and free up your morning cooking times. Using rolled oats is an easy and tasty way to get whole grains into your diet, which the Mind Diet recommends. Loading your overnight oats up with extra fruit is a great way to get some extra antioxidants in as well, which is very good for your heart and brain health.
The great thing about overnight oats is that they’re easy to make and incredibly customizable. Texarkana Emergency Center encourages you to change up your flavor combinations, use different fruits, and have some fun with your healthy breakfasts.

Ingredients:
In a medium sized bowl, combine yogurt, oats, milk, fruit, whey sugar, chia, and espresso powder. Mix well and cover, then set aside in fridge overnight. When serving these oats, sprinkle roasted nuts or additional fruit to taste.
